Fireweed flowers only last for a week and will only appear when the humidity is less that 50 percent. So prized is fireweed honey, beekeepers will relocate their hives to be near a patch of fireweed blooms. Because the flower cannot be cultivated, very limited amounts of fireweed honey can be made. Fireweed honey has a light, delicate smell and a fine, spreadable crystalline texture that reminds me of champagne bubbles. The flavor is like a sweet summer pear: light, luscious, mouthwatering."
