This Locust Honey has apple blossom and cherry blossom in it. The apple blossom and cherry blossom give it the darker color.

This honey is slow to crystallize.

Product Description

Raw Locust honey in a 6 pound container. This honey also contains apple blossom and cherry blossom in it. We are fortunate enough to know a beekeeper who also produces Locust Honey and while the Locust trees were blooming in his area, the apple and cherry trees also started blooming.

How a beekeeper produces a certain type of honey is to place empty supers (white boxes you see on the hives) on the hives just when the Locust trees blooms open on the trees. Once the blooms fall off, the supers that were placed on the hives are removed.

Part of the time this year the Apple trees and Cherry trees were blooming simultaneously when the Locust trees were blooming.

Pleasant tasting honey with primary tastes of apple blossom and cherry blossom with a hint of locust. Should stay liquid longer due to the Locust in it. This honey is medium in color due to the apple blossom and cherry blossom in it. Sweeter honey and great all around honey to use in cooking, tea's, smoothies, etc.

Raw honey has not been heated and simply filtered through a large mesh screen. The screen removes larger particles and allows pollen, propolis and beeswax particles to pass through it. Pleasant tasting honey, aromatic, and ranging from water white to light yellow in color, this honey comes from the black locust tree which flowers in long white racemes.

why compromise?
This is a less expensive way to order locust honey, but the apple and cherry blossoms seem to add sweetness, not flavor. It doesn't taste like apple or cherry to me, or anything floral--I know blossoms don't taste like fruit but still.... The result is a good sweetener for strong tea but not something to put on a bland biscuit. If you want locust honey, buy the small quantities of the pure stuff they had available this year rather than this 6 pound container. Also, I wish they would use glass jars. With plastic milk jug containers, half the honey stays stuck to the sides and won't come out the small hole in the top. Good luck getting it out with a knife; a spoon won't fit. The secret for using the knife is to use a sharp one: cut the entire top half off the container once you've used up half the honey. Good luck avoiding getting slivers of plastic in the rest of the honey while cutting. Yum! This time I just poured it all into a 1/2 gallon glass jar left from another brand of honey before it crystallized and became nearly impossible to pour.

Reply from eBeeHoney Claude, sorry to hear you did not like this honey. It is a very mellow tasting honey as is Locust Honey. If you want stronger tasting honeys we would suggest raw wildflower or even raw buckwheat honey.

As far as shipping large glass containers, years ago we did and the damage irregardless of how much bubble wrap, paper, peanuts that we used the carriers still managed to break over 20% of orders shipped. Plus none of the carriers cover glass breakage and then the cost of cleanup of honey spills was crazy. So we switched to plastic containers and since that time the damage percentage is under .05%. We fill all orders just prior to shipment so your honey has not been sitting around for weeks or months on end, so we take every measure to make sure the honey is excellent.

Sorry again you did not like the honey, but that is the beauty of honey as there are hundreds of varieties and they all taste different - some you will enjoy while others not as much.

We really like this honey and the sweet delicate taste. You can taste the locust but also a bit more flavor as Locust is a very delicate tasting honey. The apple and cherry blossom honey give it a very nice taste and our customers love it. Thanks for offering it.
