Spring Blossom Honey!
We're calling this Spring Blossom Honey. It's a mixture of Locust Honey and Spring Blossoms (Apple Blossoms and Cherry Blossoms).
This came off the hives last year and we held some back so it would crystallize for folks. Honey tastes like Locust with Apple and Cherry Blossom honey in it - great light taste, not overpowering at all! The color is a bit darker than pure Locust Honey, but still very light in color compared to other honey varieties.
We stored it to see how long it would take to crystallize. It took about 15 months to crystallize. It did not crystallize in a very hard state. Some honey varieties (i.e. buckwheat) can crystallize in a very hard state. This is quite soft at this time and easy to spread.
If you like honey that has a fantastic flavor, but not too strong, you'll really like this honey.
This honey is in very limited supplies and once it's sold out, that will be it.
